Buffalo Chicken Quesadillas


Love Quesadillas? Love buffalo sauce? Then the buffalo chicken quesadillas are your new go to food! These quesadillas use a surprisingly simple, yet flavor packed homemade buffalo sauce that can be whipped up in no time!

Ingredients
1/2 cup Hot Sauce (I use an off-brand of Frank’s from Aldi’s) 1/2 cup Butter, melted 2 cups Shredded Chicken 1 Package of Shredded Cheese – Taco, Mexican, or Cheddar are all house favorites (use the amount of cheese to your liking of cheesy-ness) 8-10 Large Tortillas (I like to use whole wheat for a healthier version) 1 Tbsp of Olive Oil plus more as the pan runs out
Directions
Mix the hot sauce and melted butter together to make the Buffalo Sauce (yes buffalo sauce is that easy!) Add the Buffalo Sauce to the shredded chicken and mix thoroughly Wrap the Tortillas in a paper towel and microwave for 15-30 seconds so they are more pliable Heat 1 Tbsp of Olive Oil over medium heat While the Olive Oil is heating: sprinkle some cheese on one half of a tortilla, add enough chicken mixture to cover the half of the tortilla with cheese, and top the chicken mixture with more cheese, then fold the other half of the tortilla (this should be completely void of cheese or chicken) over the cheese and chicken. Cook the Quesadilla in the oil for about 2-3 minutes on each side, or until golden brown Repeat steps 4 & 5 for the rest of the Tortillas.
Toppings/Side Notes

My husband loves to add sour cream, salsa, and cilantro on top of his quesadillas, but I’m sure dipping them in Ranch dressing or Queso dip would also make these things even tastier!

Tip: Don’t shred the chicken by hand if you have a stand mixer toss cooked chicken breasts (I cook chicken breasts to perfection for 30 minutes in the InstaPot) into the mixer, use the paddle attachment, and turn on low-medium speed for a couple minutes until the chicken is significantly shredded.
